The Weald Smokery has added a lovely new product to its range of traditional smoked food, the Royal Fillet of smoked salmon. This is smoked in the traditional brick kilns over smouldering local oak shavings, then the prime fillet is cut out so that it can be cut horizontally into medallions which could be served with a wasabi sauce or similar. This makes an ideal starter or canape and would certain stimulate conversation!
