While focusing on indistinguishably replicating the original’s flavour, texture and quality (we can confidently claim), developing the new Fudge Kitchen free-from range is also about inclusivity, about making sure that no one misses out on the undiluted FK experience; as MD Sian Holt explains. “It’s less to produce a product that doesn’t contain something – it’s not enough to be free-from – primarily it has to taste good and to make our premium products available to everyone, from diabetics to weightwatchers to food intolerants.”

 Sugar-free Delectables …

The Fudge Kitchen nine-strong Delectables range of premium brittles and caramels was an immediate hit on launch in 2016, already notching up two Great Taste Awards for the Almond Bark and Peanut Brittle; and the perfect impulse gift or impromptu self gift.

To then decide to launch a sugar-free version of these two winners was verging on hubris. To then produce sugar free counterparts indistinguishable from these originals was verging on genius! And indistinguishable they clearly are, as blind taste tests thrown out to customers and food press in Spring 2017 proved, with a neat 50:50 split result on which was which.

Ever the perfectionist pioneers, FK’s hunt for a sugar substitute without aftertaste, with just the right sweetness and texture was a global one. They needed a substitute that behaves like sugar, enabling their prized, artisan production methods of hand stretching the brittle for just the right snap and hand rolling the caramel for extra creaminess, before cramming them with crunchy, savoury nuts. The year long search ended in Belgium and with Zùsto® – a revolutionary sugar replacement, consisting of a unique core matrix of:

  • An identical taste and texture experience to sugar with a quarter of the calories and none of the drawbacks of aftertaste or over-sweetness of other substitutes.

A product unique to Fudge Kitchen, Drinking Fudge is pure indulgence in a mug – or glass: it’s equally good in a cold mix, made into a frappe or even in a fruit smoothie.

The dairy-free Drinking Fudge range uses soya milk, where whipping

cream is used in the original, and comes in single serve sachets ready to

snip, squeeze and stir into a preferred milk substitute and served either hot

Dairy-free vegan slab fudge …

Fudge Kitchen was built on fresh whipping cream ‘slab fudge’. Made by hand in our seven UK wide shops for over 35 years, using a core recipe dating back to the 1830s and all natural ingredients. We use the traditional method – boiling up the fudge in huge copper pots, before pouring it onto an Italian marble counter, where it is ‘slabbed and loafed’ as it cools, an authentic technique using outsized spatulas to turn the solidifying fudge as it cools, breaking up any granulation and ensuring our world famous creamy texture and soft centre. In this way, it is shaped into a long ‘baguette’ before being sliced into generous 175g slices. Available in a kaleidoscope of over 20 innovative flavours – from Sea Salted Caramel to Strawberries and Cream and freezable up to 6 months … but rarely put to that test!

Our dairy-free range (below) is made in exactly the same way, with only natural ingredients, but with the whipping cream substituted for either soya cream or coconut cream. Again, we’re confident that it is indistinguishable from the dairy original.
