To celebrate the launch of a brand new snail dish and their new menu Café Rouge have appointed Helen Howard as the UK’s first snail sommelier. Although in Europe, the word ‘sommelier’ is usually associated with wine, in Japan it is used to describe an expert in any field from sake to vegetables to music. If you haven’t tried snails before then just try Ragout d’Escargots, the mushroomy flavours of escargots embellished with wild mushrooms and truffle oil.
